Green and yellow noodles with Barbel fish sauce, served with chanterelle mushrooms and Roman Broccoli

Fillet of Turbot passed in Castelluccio lentil sauce with crunchy leeks

Grapefruit sorbet served in its fruit

Chicken stuffed with dumplings and horse chestnuts, glazed with Nosiola, served with wafer potatoes and water cress onions

Flan of plain and white chocolate panettone with exotic fruit salad

ST. SYLVESTER GRAN GALA DINNER

as we welcome together the New Year 2010

At 8:00 p.m. we will start the Gala Dinner with a buffet cocktail

Lobster médaillon with mushrooms flavoured with green lemon

Red Treviso chicory velluté with crunchy scallop and golden shards

Rice with artichokes, oyster and goat’s cheese

Sea bass with almond crust, purée of Jerusalem artichokes and Scorzanera

Passion fruit sorbet

Filet steak flavoured with thyme, pan stirred shallots with potatoes cooked with salt and perfumed with liquorice.

Wafer delight filled with horse-chestnuts served with Chantilly cream

Good luck pastries served with chocolate and zabaione sauces
